1 1/4 cups (250g) Organic Raw Sugar<br />
2 1/2 cups (250g) Organic Ground Almonds<br />
1 tsp Organic/Gluten-Free Baking Powder<br />

Pure Icing Sugar to Serve<br />
<div class="module-content"> <ol id="method"><li>Preheat oven to 170°C. Grease and line the base of a heart-shaped pan. </li>
<li>Place the two whole oranges in a saucepan and cover with water. Bring to the boil and simmer, covered, for 1 hour, ensuring that the oranges remain covered with water. Drain and cool. Chop the oranges into quarters, discard any seeds, then place the chunks into a blender and puree until smooth. </li>
<li>Beat the eggs with the sugar until thick, then add the orange puree, ground almonds and baking powder and mix well. </li>
<li>Pour into prepared pan and bake for 1 hour. Leave the cake to firm up in the pan for 20 minutes then turn out, remove the baking paper and turn over to finish cooling right way up. This cake definitely mellows with a little time and can be prepared up to 48 hours in advance. </li>
<li>To serve, sift icing sugar on top and decorate with orange zest and almonds.</li>

Rub flour and butter together until resembles something a little like chunky bread crumbs. Make a hole in the centre and pour milk. Stir together until it binds. Sprinkle some flour on bench and knead mixture lightly. Roll out and with round cookie cutter cut as many scones as possible (if you dont have round cookie cutters, cups also do a great job). Cost Rating- 3/5 - this is probably the only draw back of this recipe. At $10 per/kilo, Amaranth is not the cheapest grain out there. With a serving cost at around $2.50, it is still cheaper than that decafe latte.<br />

Preparation Rating 4.5/5 - can you peel and chop apples? then this is the recipe for you. Nothing to it and guaranteed to turn out right.<br />

Taste Rating 4/5 - does need a little bit of honey to sweeten up, but the amaranth porridge has a lovely light soft texture that makes it really easy to digest and the warmth is perfect for those chilly mornings. <br />

While amaranth is cooking, stem and wash spinach, then simmer until tender. Dip tomatoes into boiling water to loosen skin, then peel and chop. Heat oil in a skillet over medium heat and add garlic an onion. Saute approximately 2 minutes. Add tomato, mushrooms, basil, oregano, salt, pepper and 1 Tablespoon of water. First I went to the local butcher who does organic meat (5 min drive from my home). He is friendly, full of information and not too expensive. One down, going well. The second stop was a 15 min drive from my home. I went to a farm who has set up a shed to sell from. I must admit I was kind of expecting a rustic, quaint, charming little farm with a delightful farm house and a cute little shop. Well, I was wrong. It is a little on the messy side, the home is just an old sort of home and the cute little shop was actually a tin shed. BUT, the lady was lovely and helpful and the food was wonderful. The selection was huge, including cheeses, all kinds of grains, jams and other shelf items. Grace loved chatting to the dogs and chooks and I loved knowing I was actually buying organic. I didn't even really consider that there may not be eftpos so the lady sent me home without paying until next time I came. Go the good ole days. My third stop was Aldi and to my delight they have added quite a few new products to their organic range. YAY. My forth stop was Woolies where I got some herbs and almond meal, the couple of things I wasn't able to get anywhere else.</div><div style="color: #666666; font-family: "Trebuchet MS",sans-serif;"><br />

I started my weight loss journey by pretty much eating anything God made. ie, fruit, veg, herbs, meat and drinking water. Over a seven week period I lost 7kg. Although I did love my new ways we became homeless (while renovating) and lived with my sister for five weeks and my husbands brother for three weeks. Both of these families eat well and I was able to get out for walks often I was able to keep the weight off (not lose any as there were many take out days due to being on the road a lot). It was at my brother in law's that I read 'You are What you Eat' and my interest in organic food really began.</div><div style="color: #666666; font-family: "Trebuchet MS",sans-serif;"><br />

In three weeks I gained 4kg. My response was to follow the body trim diet (using as many organic foods as possible) in which over six weeks I lost 5.5kg. I went into a health food shop to buy some protein powder and was given the blood type diet by a natropath (eating only organic foods). After much looking and swapping about I was able to pull together a menue that follows the principles of both and eat really delicious, nutritious, organic food. When I was twenty-two I felt like I was in heaven when we had a bread maker and I ate hot fresh bread with a little bit of butter and some honey every day. I probably ate between two and four pieces of bread but the rest of my diet probably fit quite well into the above plan. In three weeks I put on four kilos. <br />

Although quite a bit of the book freaked me out, there were many elements that I was interested in using in my cooking and our overall diet. As I have been on almost every diet known to man, my weight has gone up and down but I have never really ever been able to permanently stay in my healthy weight range. One of the first books I read since really starting this journey was 'You are What you Eat'. Can I just say that woman is a manic. The idea of eating only raw food for the rest of my life just makes me want to cry. And legumes - yeeks. But she did catch my attention when she said I can slow down aging, have glowing skin and hair as well as the obvious losing weight. Is there an organic, healthy way of getting those results while eating warm foods at least in winter, not completely breaking the bank and living a relativly normal life??? </div><div style="color: #666666; font-family: "Trebuchet MS",sans-serif;"><br />
